Cinnamon Roll Baked Oatmeal

My sister found this recipe and she is a wizard in the kitchen, so I trust her when she says something is good.

I’ve been trying to cook breakfast for my kids more often, and this was delicious and filling! That’s a big deal for these boys who seem to always be “soooo hungry.” Enjoy!

Ingredients:

  • 3 cups quick cooking oats
  • 1/2 cup brown sugar
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 2 eggs
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons vanilla
  • 3/4 cup heavy cream (you can use milk, but cream makes this richer and creamier)
  • 1 teaspoon cinnamon

Glaze:

  • 1 cup powdered sugar
  • 3 tablespoons milk
  • 1/4 teaspoons cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl combine all ingredients, except glaze, and stir until well combined.
  3. Spread into a 9×13 pan or into individual ramekins.
  4. Bake for 20-25 minutes for 9×13 pan and 12-14 minutes if using ramekins.
  5. Combine glaze ingredients and stir until smooth. Drizzle over hot oatmeal.
  6. Serve and enjoy!
Anytime there is even a hint of dinner being ready, he makes a beeline for the table.
